Ingredients
Soup Base:
- 1 lb boneless, skinless chicken breast
- 2 bell peppers, chopped
- 1 large onion, chopped
- 3 tsp garlic, minced
- 1 (14 oz) can diced tomatoes, not drained
- 1 (14.5 oz) can Rotel tomatoes with green chilies, not drained
- 1 (14.5 oz) can black beans, drained & rinsed
- 1 (14.5 oz) can corn (drained) OR frozen corn
- 4 cups low-sodium chicken broth
- 1 packet taco seasoning
- 1 tsp black pepper, crushed

Instructions:
1. Prep your ingredients.
Chop bell peppers, chop the onion, mince the garlic, and clean the chicken. Drain and rinse the black beans.
